62 msfocusmagazine.org Life with MS Fatigue-Free Foodie: Presenting healthy recipes that won’t wear you out Many of us would like to make better food choices, but when fatigue is a factor, we find ourselves falling back on unhealthy convenience foods. In this series, we provide simple, nutritious recipes that won’t have you slaving over a hot stove. Apple Pie Oatmeal Bars These soft, chewy bars will satisfy your snack craving with a healthy combination of fruit and oats, or as a grab-and-go breakfast option. Each bar offers a good amount of fiber, and they are free of cholesterol and very low in fat and sodium. Ingredients: 2 cups old fashioned oats 2 cups applesauce, unsweetened 1 tsp vanilla extract 1 tsp apple pie spice (or substitute ½ tsp cinnamon and ½ tsp ginger) 1 dash salt 1 tbsp sweetener – agave, maple syrup, or honey (optional) ½ cup dried fruit – golden raisins, dried cranberries, or dried cherries Instructions: Preheat oven to 350o F. Add all ingredients, except dried fruit, to a large mixing bowl and stir until all oats are moistened. Mix in dried fruit. On a baking sheet lined with your favorite non-stick baking surface (parchment, non-stick foil, silpat) shape heaping spoons of the mixture into 12 bars.
