Here are a few of our favorite reader-submitted recipes and cooking hacks. Chocolate Hummus – Tiffany S. Campbell I started reading my newest MS Focus magazine and saw the request for quick, easy, and healthy recipes for people with MS by people with MS, and I just had to share! I have been diagnosed since 2005. I got the idea for this recipe from one of my MSpals through Facebook. I’ve made this so many times and it is a regular request from my13-year-old stepdaughter. Chocolate hummus is good for a snack with pretzels or fruit, on a peanut butter sandwich, or just by the spoonful. (It is also vegan and I think Paleo!) Ingredients: 1 15 ounce can garbanzo beans, drained and rinsed 1/4 cup cocoa powder 1/4 cup maple syrup 1/2 tablespoon vanilla extract 1/4 teaspoon salt 2 tablespoonvanilla coconut milk (can use plain, more orless depending on consistencyyou desire) Instructions: Put all ingredients in a food processor and process until no longer chunky! Notes: This should make at least four servings of hummus. I’ve experimented by adding cinnamon and bananas, but the original is the winner with my family! MS HACKS
