But before reaching for the potato chips, why not try a snack with a stronger nutrient prole and lower fat and salt? Kale chips are quick to make and surprisingly deliciouseven to people who dont normally like kale. Ingredients: 1 bunch of kale 1 tbsp olive oil Salt to taste Instructions:Preheat oven to 400 F. Tear or cut washed and thoroughly dried greens off the spine, into pieces about 2 inches by 2 inches. (Dispose of the spines or save to use in making vegetable broth.) In a bowl or freezer bag, toss with oil to lightly coat. With your hands, carefully spread the leaves onto two baking sheets in a single layer, with as little overlap as possible. Sprinkle lightly with salt. Cook for 10 minutes, then remove from the oven and turn pieces over. Spread them out again, avoiding overlap. Return to oven and cook until evenly crisp, about another ten minutes. Serve and enjoy. Tips: Kale comes in many varieties and it can be fun to experiment to see which you like best. For this recipe, I prefer the flat-leafed Lacinato variety (also called dinosaur kale) because it cooks more evenly. Make sure your kale is completely dry or it wont crisp up.
